The humble oyster has been overlooked by the masses for generations, once being a staple of coastal communities far and wide, to today exclusively being enjoyed by those with the most refined palates.

Sustainability is at the heart of what we do. Oyster farming is the most sustainable form of fishing. Oysters have an unrivalled positive impact on the aquaculture and the ecosystems they inhabit, individually filtering up to fifty gallons of water per day.

Carrier bags of samphire, Cromer crabs wrapped in newspaper and jars of winkles were on the menu almost every Friday night at my family home.

From an early age I was brought up on Norfolk seafood and fell in love with the untampered flavours they had to offer. Regular trips to Stiffkey, Blakeney and Morston with my Grandad, helped me develop a further understanding of the importance of eating seasonally, sustainably (only taking what you need) and becoming at one with the environment.

On returning from these visits to the coast, my Nanny would take great pleasure in teaching how to expertly prepare the fruits of our labour in the kitchen. Scrubbing mussels, dressing crabs and peeling shrimp. Although time consuming and fiddly, the end results would be highly rewarding and most importantly utterly delectable.

To continue the legacy my grandparents instilled from such a young age, the Thornham Oyster Company has allowed this passion to flourish and venture to all four corners of the British isles. Seafood provides me with happy memories, to me it is so much more than food, it has become my life.


Ever since I was a little lad, I’ve loved all seafood going. My mum tells stories of pushing my pram past Norwich market and not being able to get any further without picking up a tub of cockles to keep me quiet as a toddler. And today, all grown up, a proud Norfolk man, I take such pride in being able to sample such an extensive variety of wonderful seafood that our shoreline has to offer. At the top of the list, at pole position, comes our world class oyster! I’ve been lucky enough to sample oysters from all around the world and I haven’t had better than from the North Norfolk coast.

We started the Thornham Oyster Company with a passion, a drive and above all, a love of our beautiful namesake. This exquisite treasure showcases the astounding area in which we reside and to share this with people from far and wide, oyster virgins to experts, and to see the joy they create brings me such a huge sense of happiness. Our ever sustainable, eco-friendly, delicious oysters get people talking, puts smiles on faces and excites palettes. Let’s crack on and get shucking


My happy place has always been reconnecting with the Norfolk Coast, foraging for wild mussels, cockles, samphire and delicate salt marsh herbs. On my days off you will probably find me exploring new creeks, immersed to my thighs in the dark rich salt marsh clay, or in our incredible coastal restaurants and gastro pubs enjoying the exceptional delights that the north sea and local chefs have to offer.

As a young boy my siblings and I used to squeal with joy as we dived down the banks of the creeks splashing and swimming in their shallow warm water. Learning to sail where Nelson once navigated cutting through the waves, the same salt spray lashing at our faces.

For many years the salt marshes and beaches of Norfolk were a distant memory, life and work took me away, swapping the fresh air for car fumes, bird song for traffic noise, and the beautiful vibrant colours of the coastal palette to a myriad of greys. My heart and soul were desperate to return to a happier and more wholesome times so I decided to move back home and after seeing huge opportunity with the local seafood, founding the Thornham Oyster Company with two friends. After just a few short years I am so incredibly proud of the impact we've had in forgotten coastal communities.


My love of seafood, and in particular oysters, began on the west coast of Ireland at my parents favourite Linnane's lobster bar. The crystal clear and cold waters of Galway bay had me hooked from the age of 10. Since moving to Norfolk, I never thought I would taste oysters as good as my childhood, until I came to the shores of north Norfolk.



My love for oysters was sparked on the rugged coast of Cornwall. Despite being surrounded by a wealth of fresh seafood, I was yet to find oysters that could match the unique flavor and texture that I had come to know and love. That all changed when I discovered the oysters of Norfolk. The first time I tried one, I knew that I had found something truly special. The delicate flavor, the beautiful texture – it was like nothing I had ever tasted before.

Inspired by my newfound love, I decided to create a website for the Thornham Oyster Company. With my background in web design and my appreciation for all things oyster, I was the perfect candidate to bring the company's vision to life.


Having joined the team in 2021 and catering for large groups for over 20 years, with personal pride and emphasis on the quality, sustainability and providence of ingredients, I always felt The Thornham Oyster Company matched my ideologies and haven’t looked back since. Such wonderful local produce, exciting ideas and a fantastic team, I truly look forward to what the future has to offer!
